Simone Perata, born in 1988 in Celle Ligure, began his culinary career after a period as a volunteer in the Navy. With a diploma in surveying, his passion for cooking blossomed during his assignment to the kitchens of the Coast Guard in Savona. His early experiences led him to Cambio in Turin and to A Spurcacciun-a, where he learned the basics of Michelin-starred Ligurian cuisine. His thirst for learning took him to Milan to work with Gualtiero Marchesi, then to Paris with Alain Solivérès at Taillevent, and finally to Barcelona at Lasarte with Martin Berasategui, where he contributed to earning the third Michelin star in 2016. In 2018, Perata returned to Liguria to lead the kitchen at A Spurcacciun-a, presenting a refined fusion of local tradition and international creativity.
A Spurcacciun-a celebrates local ingredients, freshness and seasonality, welcoming products from fishermen, farmers and small local producers on a daily basis. As of May 2018, the cuisine has been revolutionized, combining tradition and innovation through international influences. From daily fishing in San Remo to Slow Food cheese from Albenga, the cuisine reflects the richness of the area. With distinct flavors, dishes such as Millefoglie di foie gras and Cappon Magro are created, exploring Ligurian tradition and reinterpreting it with a contemporary twist. The Alta and Bassa Marea menus offer a gastronomic journey between past and present.
